Gluten-Free Christmas Cookies

Having trouble finding a gluten-free Sugar Cookie Mix? 


Well, back in 2011, there weren't many, if any, gluten-free Sugar Cookie mixes, so I had to improvise! 

Thankfully, I found that Pamela's Classic Vanilla Cake Mix had a recipe for Sugar Cookies. We gave it a try and it worked - they turned out great!

If you get in a pinch and can't find a gluten-free Sugar Cookie Mix (Pamela's makes one now too!), but have Pamela's Vanilla Cake Mix on hand, try make Sugar Cookies this holiday season.

Let me show how easy they are to make!                    

Step 1:

Preheat Oven 350

1 Package of Pamela's Classic Vanilla Cake Mix
1 Egg
1/4 C. Water
1/2 C. Unsalted Butter

Parchment Paper

Pamela's note: Due to the salt ratio in the mix of making a cake, use UNSALTED butter when making cookies so they won't be too salty.

Mix all ingredients together. Mix for for 1 minute, I used my hands as you will see the dough is little pieces. After dough is formed, refrigerate until dough becomes stiff. Take dough out and place on parchment paper or wax paper. Place another piece of paper over. Grab rolling pin an start rollin'! 


Step 2:
Grab cookie cutters and cut-out your holiday shapes.

Ready to go in the oven!

Frosted and Sprinkled!

There you have it friends! If you can't get your hands of Pamela's Sugar Cookie Mix in time for the holidays (you can order some below), try her Vanilla Cake Mix instead!
