Gluten-Free Chicken Stir Fry

While making this Chicken Stir Fry for dinner the other night, I thought about how this was one of the first meals I made living on my own in college.  I want Jack to have plenty of go-to gluten-free recipes when he's a young adult living on his own - so this can be an alternative to Chinese Take-Out! It's an easy/fast gluten-free dinner packed with veggies and protein! Choosing the right Teriyaki sauce is what makes this gluten-free. For example, I always used the brand Kikkoman, but unfortunately, it contains wheat. So we found a new gluten-free teriyaki sauce by La Choy - it's a sweeter taste, but we enjoy it!

Below is easy to follow steps that will allow Jack to cook this recipe on his own! So Jack, I'm preparing for your future buddy! I hope you refer to this recipe when you leave your Mamma's Den, but not too soon though - thankfully - you're only 5 yrs. old. ;)

Gluten-Free Chicken Stir Fry


2 Chicken Breasts - Chopped
Assorted Veggies - Pick your favorites
White Rice 
LaChoy's Teriyaki Sauce 
Olive Oil
Salt and Pepper to Taste

Step 1: Cut up Veggies or Buy Pre-Packaged Veggies 

Instead of cutting up chicken first,  I cut the veggies first so I don't have to wash the cutting board. 


Step 2: Cut Chicken Breasts/Add Olive to Pan/Add Chicken/Salt and Pepper

Step 3: After Browning Chicken/Add Veggies/Salt and Pepper

Step 4: Saute veggies for 5 minutes/Then add La Choy Teriyaki Sauce

Step 5: While Veggies Saute' for 7-10 minutes/ Microwave Rice-Follow Directions on Box/ Equal parts water and rice - 2 cups water/2 cups rice

 Step 6: Time to Eat!  

It's a delicious, fulfilling meal that really takes no time to make! Do you have plans for dinner tonight? Enjoy!
