National Pancake Day!

One of Jack's all time favorite things to eat - PANCAKES! So in honor of National Pancake Day - I thought I would share with you Jack's favorite ways to eat them.

Jack loves eating his gluten-free pancakes with butter, peanut butter and syrup. No joke, the kid doesn't mess around when it comes to his pancakes!  We love making Pamela's Products pancakes - they are so delish!  I make a batch at a time and freeze them.  The best part about Pamela's Products, besides the fact that they are so good, is that they are conveniently located at my grocery store down the street.

I think Jack will eat pancakes anyway he can get them. He also likes them with strawberries, blackberries or raspberries. The boy could be in a GF pancake eating contest!

So for dinner tonight, I think it's safe to say, it's PANCAKES!

The 2012 Gluten & Allergen Free Expo - April 14th and 15th

I'm very excited for the upcoming Gluten and Allergen Free Expo in Chicago (Lombard), Illinois on April 14 and 15th. This year, I will bring the whole family.  It will be great for Jack to walk around to different vendor booths to try their samples and it's always fun meeting new people and at the same time thanking my favorite vendors, like Pamela's Products and Udi's!

Vendor Fair - so much to see!

Last year I went to the Expo (check out my blog post here) by myself, but this year, I feel like my kids are old enough to walk the Vendor Fair w/ us.  **They do not allow strollers in the expo, which makes sense, they take up a lot of room and block vendor tables. I encourage taking children (if they are old enough to walk) to these events especially if you are wanting them to try new GF food options. It's so nice to be able to sample foods before buying them! I've bought numerous GF items that have been wasted because Jack didn't like them - so thank you for this opportunity to sample freebies!

Besides the Vendor Fair, there are cooking classes also available.  Last year I attended cooking sessions on Saturday and I went to the Vendor Fair on Sunday.  The cooking classes were enjoyable and it was helpful listening to the presenters give their tips on baking and cooking gluten-free. One of the cooking sessions I went to was with Stephanie O'Dea  - she is the author of the best selling book "Make It Fast, Cook It Slow" - the best part - all the crockpot dishes are GLUTEN-FREE! So that was very inspiring!

This year, I won't be attending any cooking classes due to the fact that my children will be with me, but I would encourage you to check out the classes being offered to see if there is something of interest to you.

If you haven't been to a Gluten-Free Expo yet, I would encourage you to attend this one.  I have nothing but good things to say about my first experience. Check out this link for a quick Q&A about the Expo. BTW, Chicago is a fabulous city to visit so keep that in mind as well! :) We are hoping to extend our weekend to visit the Shedd Aquarium

Cheeseburger with a BUN! Woohoo!


Yes my friends, it's exciting stuff! To see your child enjoy a cheeseburger with a bun is the little things in life that make me smile.

My husband came home from the grocery store this past weekend with some Udi's Hamburger Buns so cheeseburgers were on the menu for dinner last night.  Jack is only interested in eating cheeseburgers right now, he doesn't like chicken or fish, but I'm working on it! I'm just happy with the cheeseburgers - it's a start!

Along with the cheeseburger,
we had Ore Ida Golden Crinkles French Fries which say "Gluten-Free" on the bag - I'm always a fan of that! Jack loves french fries!

So with that said, I want to thank Udi's and Ore Ida for creating GF products that are readily available at my regular grocery store. I do most of my shopping at Kroger and I'm so happy they have a Udi's section in the bakery. Not having to drive across town to a specialty food store to purchase gluten-free products makes for a happy mamma!

We look forward to cooking on the grill this summer and enjoying more cheeseburgers WITH BUNS as a family!

Chick-fil-A's Gluten-Free Grilled Chicken Nuggets Giveaway!

This is very exciting news! Especially for us folks who visit Chick-fil-A once a week!  Chick-fil-A is making strides to fight childhood obesity and therefore they have launched "One of America's Most Nutritious Kid's Meals", which is also GLUTEN-FREE. Grilled Chicken Nuggets, Buddy's Fruit Applesauce or Fruit Cup.

Gluten-Free Indianapolis for the Superbowl!

With the Superbowl being in my hometown of Indianapolis, I felt like I needed to post something for this big honor! This post is soooo late and I'm bummed I didn't get this out a week ago, but hey, I was moving to a new house! So better late than never, right?? I hope this post can help someone while visiting the Hoosier state for the big day!
With so many out of towners coming to Indianapolis for the big event, I'm sure there are many searching for gluten-free options in the area. I'm sure most of you have done your research already, being that I'm posting this the day before, but I hope this list from "Gluten-Free Indy" helps for those last minute GF needs!
If you are downtown enjoying all the festivities and want to head to a restaurant, check out Old Spagetti Factory, Weber Grill, Scotty's Brewhouse and PF Chang's. Their GF menus are easy to nagivate! 
If you are in need of GF items, Nature's Pharm is located in Greenwood which is south of Indy - only 15 minutes from downtown off 31 (right across from Mike's Car Wash in a brown country like store).  They have everything you need for GF as well as other allergen free items - I highly recommend them.  Make sure to check out this list of other Indy stores that may be more convenient to where you are staying that also provide gluten-free items.
I hope you find Indianapolis accomodating for your GF needs. I'm very proud of Indianapolis and have heard wonderful things from this week's Superbowl events.
Last but not least, GO GIANTS!! You know I have to root for the other Manning!!
