Gluten-Free Easter Bunny Sugar Cookies

I was asked to make cookies for Jack's pre-school class this past week, preferably a bunny they could decorate for their Easter celebration. With spring break this week, their Easter celebration and the sugar high began earlier this year.

As you may know already, I recently used Pamela's Sugar Cookie Mix when I made valentine cookies - they turned out great, and I knew I could rely on the mix again.

I'm really sharing this post so I can show you my cute little bunny. The cookies turned out great and I was happy my son could have the same treat as his classmates.

I'm not a "bake it from scratch" type of gal.  The only thing I ever baked from scratch was Chocolate Chip cookies - following the recipe on the back of the Nestle chocolate chips bag.

I'm more of a "throw things together and hope it turns out great" type of gal. That's why I love chicken stir frys and crockpot dishes.

With having a 5 mo. old, 5 1/2 yr. old and 7 yr. old, I appreciate shortcuts and skipping steps 1-2 and 3 if possible! Pamela's mixes provides this for me and makes baking fun and stress-free.

Now, if I could just figure out what to get the kiddos for Easter - cookies??
