Gluten-Free Strawberry Shortcake Bowls & GIVEAWAY


I had an idea. I wanted to do something fun with strawberry shortcake. I made a gluten-free version of strawberry shortcake in the past, and it turned out great...

But, this time around I wanted to get creative and make some type of bowl...and I did.  I came up with a recipe called Strawberry Shortcake Bowls, using Pamela's Baking & Pancake Mix.  Below, I share this delicious, gluten-free summer treat with you, as well as a GIVEAWAY for Pamela's Baking & Pancake Mix to 3 WINNERS!



Strawberry Shortcake Berry Bowls


Step 1:

MAKING BISCUIT BOWLS
(Recipe will make 6 berry bowls)

Following Pamela's Drop Biscuit Recipe:

1 cup Pamela's Baking & Pancake Mix
1/4 cup shortening
1/3 cup plus 1 additional tablespoon milk

Directions:


Preheat oven to 375°.
In a large mixing bowl pour in Pamela's Baking & Pancake Mix and cut in shortening with fork or pastry blender until mixture resembles coarse crumbs. Pour milk into flour mixture while stirring with a fork.

Step 2:
See picture to the right. Spray with nonstick cooking spray. Divide dough into 6 dollops. Placing the dough on top of each muffin mold, begin to cup dough with hand, forming a bowl. Form the dough over the curve of the muffin mold, going down less than half way. **Note: Do not spread dough too thin, especially on the curve of the muffin mold...when baking, it may separate. 

Step 3:
Bake for 8-10 minutes. Depending on your oven, check bowls at 8 minutes. They will be golden brown when done baking.

Step 4: 

Make strawberry mixture.  Slice 1 LB of Strawberries.  Add 2 Tbsp. of Sugar. Mash or use food processor. I used our smoothie maker - it's however you like your strawberry texture. You can also use a fork or your pastry cutter to mash the strawberries. My husband likes chunks of strawberries, so I always make sure to not mash too much. Refrigerator when done. 





Step 5: 
Bowls are done baking! Admire your creation! Let them cool.















Step 6: 
Create your Strawberry Shortcake Bowl.  I don't show it in the pictures below, but the strawberry mixture is under the ice cream as well.  Follow pics below to make a delicious treat for your family and friends, or just eat all yourself! :)

What you need:

Vanilla Ice Cream
Cool Whip
Strawberry Mixture
Shortcake Bowl
1 Strawberry to top
