These are SO GOOD! They were such a nice treat for our crazy busy life. With snow days, valentine parties and my daughter's birthday, life has been crazy these past couple of weeks.
You can make these tonight, tomorrow or the next day. Any shape you want or even easier, just make regular cookies, no shapes needed.
Note: I will not always bake from scratch...why? Because sometimes, I want to create QUICK and EASY recipes that EVERYONE can do without feeling overwhelmed. For our family it works to do both - it's a good balance for us (well for me, as sometimes, I just don't have enough time in the day). But seriously, don't put so much pressure on yourself - take the night off.
So, let's get started!
Step 1: What You Will Need: Pillsbury pre-made gluten-free cookie dough, cookie cutter, favorite GF ice cream
Step 2: Spread cookie dough in an 9 x 13 in pan. Get your kiddos to help!
Step 3: Bake @350 for 8-10 minutes or until edges begin to brown.
Step 4: Let cool for 15 minutes and then use cookie cutters. You can save extra cookie pieces for your kiddos lunch or to snack on later!
Step 5: Set out ice cream 10 minutes before to soften. Place a scoop of ice cream on cookie and top with other cookie. You can use a back of a spoon to run around the edges to even out the ice cream. Use as little or as much ice cream as you want. You can eat immediately or wrap in plastic wrap and freeze for later.
