Easy Gluten-Free Restaurant Style Chicken Fajitas

These ALWAYS hit the spot - better than your favorite mexican restaurant and full of flavor!! We love mexican food around here, especially my husband, it may be his fav. I've been making these for a long time, but needed to convert the recipe to gluten-free for my husband a few years ago (Jack's not into peppers and onions yet).


And I'm happy to say, I found what I needed to do so. To make these delicious chicken fajitas gluten-free, I needed gluten-free tortillas and a taco seasoning I felt comfortable using. As you know, many taco seasonings don't say "gluten-free" on them, so you have to decide for yourself whether it's safe for your family. But, I found McCormick's gluten-free seasoning and I'm very happy with the flavor.

Check out the recipe below, you'll be happy you did!

Ingredients:



Step 1: 
Cut chicken into long strips and cook in olive oil. Once chicken is almost cooked through, I toss in the sliced red pepper, green pepper and onion.





Step 2:  
I continue to cook for another 5 minutes until vegetables begin to soften.


Step 3: 
Add half of the taco seasoning packet and water. Stir. Cover and Simmer for 15 minutes, stirring occasionally.


Step 4: 
Look at that - caramelized onions, blackened a little bit just like at the restaurant.


Step 5: 
Time to get the tortilla ready! Warm tortilla in a nonstick pan for 1 minute on each side. 

Step 6: Create your fajitas!   
Step 7: 

Time to INDULGE! Serve with your favorite gluten-free tortilla chips and salsa.  You can enjoy Mexican without having to go to a restaurant.
