Slow Cooker Mango Salsa Chicken

New recipe! And it's so EASY!

2 ingredients, that's it!  YES!

I saw Paul Newman's Mango Tango Salsa on the shelf at the grocery store and thought, "that sounds DELICIOUS and I bet it would be great with chicken." And guess what, I was right. It's SO GOOD!

And the toppings are not even necessary, so this can easily be a dairy free meal too. And a meal that your kiddos will like as well, without the onions or sour cream, right? My kids won't touch either - so this is obviously my plate. They're missing out. ;)

Mango Salsa Chicken Recipe:

2 Large or 4 Small Chicken Breasts
1 Jar of Paul Newman's Mango Tango Salsa

Slow Cooker:  Cook 5-6 hours on low.

You know when your chicken is ready when it shreds easily like in the photo below.

Served over rice with tortilla chips on the side - BAM, dinner is served. Some guacamole on the side would be nice too.

And it's VERY DELISH with tortilla chips!

So check out your salsa options the next time you're at the store. You'll be amazed at the different flavors that are available. I just happened to see Paul Newman's brand, which they also have pineapple, peach, black bean and corn salsa as well as a farmer's garden flavor (plus hot and so on).

I've made something similar with cornbread, but I added other ingredients. This particular recipe, all I needed was the salsa, I didn't even salt or pepper the chicken, it was very flavorful. AND, it's totally dairy-free too, BUT the sour cream does make for a nice addition.

Seriously, get some SALSA! :)
