I'm FINALLY posting it.
THE MOST DELICIOUS GLUTEN-FREE MAC N CHEESE EVER!
Now, I know, it's not healthy. It's NOT MEANT TO BE. It's supposed to be the kind of mac n cheese we had growing up. The kind Grandma used to make. Comfort food. Something that makes my husband happy. Being diagnosed with celiac disease later in life, my husband MISSED mac n cheese. And, he can FINALLY love it again.
It took me quite a few years to make it, as we haven't had much mac n cheese in the house since Jack's celiac diagnosis in 2009. Jack was never a gluten-free mac n cheese eater, so we never made it. And the ones I did make, the pre-made boxes were NOT GOOD. Or I didn't like the gluten-free pasta that was available. I knew if we were to ever have gluten-free mac n cheese, I was going to have to make it and MASTER it.
And I feel that I have found a recipe that makes my husband HAPPY. He REALLY loves this recipe, so I wanted to share it with your family too.
